CINCO DE MAYO REFRESCO

INGREDIENTS



3 chamomile tea bags, or an equal amount of dried chamomile leaves
2 sprigs fresh Mexican mint marigold aka Mexican Tarragon (or 2 sprigs of mint and small stalk of lemon grass)
2 cups boiling water
2 1/2 cups Peach, Melon or Mango Juice
2-1/2 cups chilled sparkling water
1 lime, sliced



DIRECTIONS


Our friends and neighbors with Spanish heritage grew up with refreshing drinks made of fruits and herbs, usually chamomile.  Perfect for hot days.  Vary the juices.  Hint, crush and strain melons to wind up with very liquid juice, which can be used fresh or made into ice cubes to keep on hand.  Last summer at the peak of watermelon time, I frozen dozens of yellow and red watermelon juice cubes--see note below.


1. Steep tea and herbs boiling water, covered, for 10-15 minutes.
2. Strain liquid into a glass pitcher. Stir in juice and chill.
3. To serve, fill chilled glasses 2/3 full with juice mixture, fill with sparkling water, and add lime slices.
Optional: Freeze the herb/juice liquid as ice cubes.  When ready for a drink place 4-6 cubes in a glass and fill with sparkling water--Wonderful and fast refresher!
