INGREDIENTS
2 cups very ripe tomatoes, chopped
1 bell pepper, finely chopped
1 small cucumber, finely chopped
1/4 cup chopped sweet onion (or red)
1 clove garlic, minced
1 tablespoon acid (red wine vinegar, lemon or lime juice)
1/4+ cup unsweetened apple juice
1/2 teaspoon black pepper
1/4 cup fresh basil, finely chopped or 2 teaspoons dried basil, crushed

DIRECTIONS
Puree or crush to liquid 1 cup of tomatoes, combine with rest of tomatoes, peppers, cucumber, onion, garlic, acid and black pepper. Use apple juice to create desired liquid consistency. Makes approximately 4 1-cup servings. Sprinkle basil on each before serving.
