INGREDIENTS
1 cup cooked and cooled soybeans
3-5 tomatoes, diced finely
1/2 bell pepper or 1 jalapeno, finely chopped
1 tablespoon of dried epazote (1 tablespoon fresh, finely chopped)
1/2 onion, chopped finely
Juice of 1 lime
Salt & pepper to taste
4 large bread rolls, hollowed out to form bowls, allow to air dry for a bit before filling.
Mix all ingredients except bread, let sit in fridge for a least an hour for flavors to marry. Serve in bread bowls (don't forget to eat the bowl!).
