INGREDIENTS
2-3 meaty Tomatoes
1 medium sweet onion
6 oz mozzarella cheese
2-3 sprigs of leaf fennel
Olive oil
Fresh lemon juice
Salt and pepper to taste

DIRECTIONS
This take-off from the traditional Italian salad classic of sliced tomatoes and mozzarella cheese, will give you a taste of fennel in a dish suitable for lunch or a side at dinner.
Slice the tomatoes, onion and cheese in thin, equal slices. Discard the thick fennel stem (or reserve for a tomato sauce). Coarsely shred the fennel leaves so you have small pieces of the "feathers."
On a serving platter alternate layers of the tomato, cheese and onion. Sprinkle with the fennel, salt and pepper to taste. Lightly squeeze fresh lemon juice over all and finish with just a light drizzle of the olive oil. Enjoy. |
